Cherry Tomato Parmesan Challah Toasts

We stopped at the Coffee Bean in Santa Monica on the way to the desert and in addition to our tasty ice-blended coffees we picked up a loaf of fresh baked Challah bread which they bake every Friday. It came in handy to make this super easy snack. Enjoy!:)JK

Ingredients

1 loaf Challah Bread
1 pint Cherry Tomatoes
8 oz of shredded Parmesan Cheese
1 bunch Fresh Dill
Kosher Salt
Fresh Cracked Black Pepper

Preheat Broiler
Slice challah bread in half cut into 3 inch slices, scoop some of the bread out of the center so there is an indentation and sprinkle generously with cheese. Halve tomatoes and place face down on slices. Place under broiler for a couple minutes until cheese melts and tomatoes wrinkle. (watch them like a hawk so they don’t burn under the broiler) Remove a garnish with fresh dill. Sprinkle with Kosher salt and fresh cracked pepper.
