Late Night Asparagus Nachos
I made these Sunday night after a day and night of revelry. It was very late and I threw them together working with what I had in the fridge but they were honestly so delicious. I’ll admit everyone was a bit skeptical at first but after they tried it every last morsel was eaten. I used a mixture of shredded Parmesan, shredded mozzarella and herbed goat cheese, but really you can use whatever cheese you have on hand. I trust it won’t be Kraft singles.
Ingredients
1 bag baked Tortilla Chips
1 8 oz tub of Fresh Salsa
1 bunch of Asparagus cut into 1/4 inch think rounds
1/2 medium onion finely chopped
1 can whole Black Beans
Lots of whatever cheese you have in your fridge, grated
3 Radishes thinly sliced
Fresh Cilantro for Garnish
Pre-heat oven to 375*
Place a layer of chips on a foil lined baking sheet, add some salsa and sprinkles of cheese, asparagus, black beans, and onion another layer of chips and so forth… Add 2 or 3 more layers, bake until cheese is melted and asparagus is bright green. Remove and scatter radish slices and fresh cilantro over the top to garnish.
Devour with gusto! x JK
This intrigues me! I never would have thought of putting asparagus with nachos but now I really want to try it. I am heading out tonight and I do have asparagus in the fridge…
It was one of those instances where necessity was the mother of invention. I had limited ingredients in the fridge and was pretty surprised they tasted so good. I hope you like them!
