Salad Greens with Strawberries Pecans and Cheese

This salad has a perfect sweet-savory balance and pairs well with spicy food like Top Secret Veggie Chili. Make sure you use a good aged balsamic vinegar and the oil from the cheese to make an extra special strawberry vinaigrette. Tastes like summer :)

4-6 Servings

Ingredients:
3 oz or 4 cups Mixed Greens
3 oz or 4 cups Baby Spinach
1 cup sliced Strawberries + 3 whole medium Strawberries
1/2 cup Cherry or Grape Tomatoes halved
1/2 cup Candied Pecans
1/4 cup Dried Cranberries
1/2 cup marinated Feta or Blue Cheese in oil
1/2 cup loosely packed Basil leaves
2 Tbs Oil from Cheese
1 Tbs Aged Balsamic Vinegar
Kosher Salt
Fresh cracked Black Pepper

Place greens, strawberries, tomatoes, pecans and cranberries in a large bowl. Chiffonade or tear basil leaves and add to bowl. Use a fork to remove cubes of cheese from oil, shake to remove oil and place into a 1/2 cup measuring cup, set aside. Take oil from cheese, vinegar, 3 strawberries, a pinch of salt and pepper and purée in a blender. Pour over salad, toss and top with cheese.
